Happy Tuesday! I always love a long weekend, but coming back to work can always be so stressful because you have to cram 5 days worth of work into 4. Sigh. Regardless, this weekend was too much fun! We celebrated our three year anniversary with an delicious dinner at a new restaurant in town, followed by brunch with a view on Saturday morning. Don’t believe me?
The plan was to go for a hike after brunch, but I was feeling all sorts of lazy, so instead we stayed home and relaxed. Much. Needed.
A few months ago I bought an Instant Pot after one of my coworkers raved about it. Basically it was sold to me as a crock pot on steroids. Now, I’ve always struggled with Crock Pots because I’m not the type of person who can set it while I’m at work and then come home to a terrific meal.. believe me, I’ve tried, and I just end up with a burnt meal. 12 hour days do not work with a crock pot. So far, I love the Instant Pot. If you are on the fence, just buy one! One of my favorite things to make are beets, and the Instant Pot makes it SO easy! Before I used to have to set my oven and roast them for an hour. Now, 15 minutes later, I have perfectly cooked beets. This is basically a long winded way of me getting to the part where I tell you about how on Saturday night I made Skinnytaste’s Chipotle Chicken Bowls with Cilantro Lime Quinoa. So easy, so tasty. Highly recommend.
Sunday was a rainy day, so I spent most of the day binge watching the Handmaid’s Tale (and being horrified — that show is scary!) and cooking up some recipes in the kitchen. It rained pretty much all day, which was sad news because that night we had tickets to the Avett Brothers. I was thinking about chickening out but I didn’t want the ticket money to go down the drain, so I threw on my warmest rain gear and ventured out to the concert with friends. Like most things in life, it’s what you make of it and we certainly decided to make it fun despite the weather! Plus, we had a pretty good vantage spot!
On monday we woke up late and made ourselves some kodiak cakes (a weekend morning tradition!) and coffee. Afterwards, we picked up the pup and headed to Colchester Pond for a nice 3 mile walk around the pond. It was perfect out and we enjoyed squeezing one last day out of summer. Plus, I got my 10k steps so I reached my daily goal. Once we were home again, I decided to whip up my favorite salad in the entire world — the kale, farro and radicchio salad from Run Fast East Slow (aka my favorite cookbook).
This salad makes the BEST weekday lunch because it keeps for a few days. Since it uses hearty greens like kale and radicchio, you don’t have to worry about wilted, nasty greens in your work lunch. Instead, the dressing seeps into the kale and gives it even more flavor and deliciousness. The farro helps make it more filling, along with walnuts (which are full of healthy omega 3s!). Not to mention, the lemon miso dressing is delicious. Miso aids in digestion and provides beneficial probiotics to your intestines, so it’s one of my favorite ingredients to sneak in when I can. I’m always looking for a way to get in more fermented foods!
All in all, it was a busy but GLORIOUS long weekend. There aren’t many weekends that both me and my husband are off for most of it together, but this weekend was one of them. Thanks for a great summer, 2017. Now onto Fall, my favorite season!
